Wild berry coconut bars

Vegan coconut bars made with Nordic Wild Foods red berries powder


For the coconut lovers - homemade vegan Bounty bars!

1 cup of light coconut milk
5 tablespoons of maple syrup
4 tablespoons of coconut butter
Pinch of salt
2 cups of desiccated coconut
4 teaspoons of Nordic Wild Foods red berries or bilberry powder
250 grams of good quality dark chocolate, melted


Pour the milk into a saucepan along with the coconut butter, maple syrup and salt. Heat on low until until everything is mixed. Take off the heat and add desiccated coconut and berry powder. 

Press down into a bowl covered with parchment paper and freeze for a few hours. Slice into bars and coat with melted chocolate. Freeze again for half an hour so the chocolate sets.
